Every once in a while in our household we need a reset. A reset isn't a cleanse it just means we need to take a few weeks and eat really clean. I actually really enjoy doing this from time to time. I find that eating simple takes less time at night. Eating simple for us means eating one serving of protein and one serving of steamed or grilled vegetable for every meal. This can start to seem boring at times but we only do it for a few weeks so it isn't too bad. The best part is how you feel after doing it though. Unfortunately this does not lend itself to stellar meal planning blogs but I will let you know what we are eating each night.<br />

We use a simple recipe for crab asparagus soup. Two packets of egg drop soup mix from the Asian food section. Make soup as indicated by directions but leave out egg. Add two large handfuls of asparagus and a package of either imitation or real crab meat. Simmer and enjoy.<br />

We took the week off last week from meal planning and boy could you tell. I feel like I was at the grocery store every other day. When I wasn't at the grocery store I was at a pick up place. Last week we were able to stick to a healthy plan without much work. We spent less money because we didn't eat meals out and we felt better because we consumed mostly healthy foods. lets be honest, just when i feel like i’ve got a grip on this workout thing, motivation drops, life goes crazy and then POOF, an excuse appears. its like magic, really. just when i need a reason not to get that run in, life almost always throws me a bone and gives me a solid reason not to.</div>

take last week for instance. in a normal week, we operate at the level of busy, which is manageable, but much easier when you are firing on all cylinders. but then the stomach flu hit me. i had no choice but to sit life out for a day and do my best to recover. losing a day out of your week is hard and then trying to make up for it while you still aren’t one-hundred percent is even harder. </div>

so with 2 weeks until the colfax half-marathon, this weekend was supposed to be my longest training run, the grand finale, final push of training, if you will. but i was dehydrated and weak from being sick. i didn’t want my last big run before the race to be horrible and possibly injure myself or even get sick while running (no one wants that!). so i didn’t do it. </div>

so i found a way. it involved waiting an extra day to know that nasty flu was behind me. it meant getting up at 5:15am and starting my run in the dark so i could be home to be with mason in time for dr. chris to head up to adjust his sunday morning patients. it wasn’t the easy way. or the way i wanted to do it. but the satisfaction i got from pushing myself beyond the excuses was more than worth it. it wasn’t the 11 miles i was supposed to do this weekend, but 9.5 miles felt far greater than doing none and letting the excuses win. </div>

When I went to the grocery store this weekend, I was thinking warm and sunny. Warmer weather always makes me think seafood boil. I am not sure why my mind goes there but it just always sounds good when you are sitting around the backyard. Of course then the storm rolled in tonight, but oh well, I wont let that disturb my tasty shrimp and super hot cocktail sauce ( Ketchup and extra hot horseradish). Another busy week in our house, Kristen is doing some freelancing and we have our oil party Saturday in the office. As well as trying to get out all the wonderful Mother's Day gift baskets to our clients who ordered them in the <a href="http://broomfieldchirocare.com/" target="_blank">office</a> this year. So we really tried to add a few recipes that can be done a head of time. Our go-to quinoa power salad and a soup. Hope this helps give you ideas for the week.<br />

<b>Tuesday- </b>Tofu Tacos (no fancy recipe for this one)<br />
First step I press the water out of my tofu which gives it a better texture. I just slice one brick of tofu in 8 cross sections. Then I place it between two cutting boards with paper towels between the cutting boards and tofu. After the tofu has been pressed I coat it with a mixture of sriracha and honey. Throw it on the grill for a couple minutes per side and cube it up. Then I simply fill corn tortillas with the tofu and any other toppings I desire.<br />

It is a busy week this week in our house. We are trying to do recipes that are prepped ahead to get dinner on the table faster at night this week. Tuesday we are cooking a whole chicken so we can use the leftovers for enchiladas Wednesday night. Just shred the chicken and make the enchiladas the night before, it is perfect. We also have one true Instant Pot recipe this week on Monday, I am anxious to see how dried beans turn out in the Instant Pot. Also a side note, Instant Pots make awesome rice and quinoa. So, two slow cooker recipes, one Instant Pot recipe and one recipe that can be made the night before, should be an easy dinner week in our house.<br />

We have a new awesome member of our small appliance kitchen family and we wanted to introduce you to it. It is called an <a href="http://instantpot.com/" target="_blank">Instant Pot</a> and it is remarkably awesome. Why is it awesome you ask? Well, because when you are constantly going, it makes it easy to cook delicious, healthy food in very little time. We were able to make an amazing chicken burrito bowl a few nights ago in less than 20 minutes start to finish. That was with delicious moist chicken, long grain rice and sautéed onions and garlic all in one pot.<br />

So what exactly is an instant pot might be the question you are thinking in your head. Instant Pot is a multi-cooker that does the job of a slow cooker, electric pressure cooker, rice cooker, steamer, yogurt maker, sauté/browning pan, and warming pot. We are still experimenting with all the different functions this machine has to offer but lets just say so far everything we have used it for has impressed us. Perfect fluffy quinoa with no effort, no problem. One pot meals that save cooking time and decrease dishes in your sink, yeah, it does that. Hard boiled eggs that peel easier than any other hard boiled egg I have ever seen, yep, covered. We even baked little tiny personal mini cakes in it last night. Next on the agenda homemade yogurt, which I can't wait for since they add so much sugar to the store bought varieties.<br />

You might see more Instant Pot recipes in the future on our blog and social media posts. There is no shortage of recipes out their as this appliance has a huge cult following. This isn't your grandma's pressure cooker, you don't have to be scared of it. It wont blow up in your kitchen, at least I should say ours hasn't yet, as long as you follow directions you should be ok. Tune in later to see how the homemade yogurt experiment goes.<br />

Sorry the meal plan is being posted a day late this week. We had a wonderful family barbeque on Sunday evening, it was such a great day for being outside we didn't get around to planning. Back from vacation and ready to get back into eating healthier and feeling good again. I feel like I ate most of the seafood the gulf coast had to offer last week. Sorry, but no meal plans this week or next week. We never plan a weeks worth of meals when traveling. What I will say is that it is always wise to not stray to far from the type of eating you are used to while you are on vacation. Yes, indulge but try to throw in some healthier meals during your travels as well. We are fortunate in that we are staying in a house with a kitchen. Whenever we travel in this manner we try to at least make healthy breakfast foods every morning. For Kristen and I this trip is all about fresh seafood. I love being in a coastal town and having multiple options for seafood. So 8 weeks ago, we took a challenge with a patient to drink <a href="http://bragg.com/products/bragg-organic-apple-cider-vinegar.html" target="_blank">apple cider vinegar</a> daily to see if the benefits we had read so much about were actually true.<br />
<br />
One of the things we had read was that it takes 60 days to see the full benefits of ACV. So we buckled down for the long haul and here we are. Was it worth it? and will we continue to drink it?<br />
<br />
The answer is 100% yes.<br />
<br />
Since we've started our daily drink neither of us have gotten sick. This says a lot, during what is traditionally known as "cold and flu season," and having a toddler bringing super kid germs home everyday. We definitely believe in the immune boosting power it brings. <br />
<br />
Both of us feel like its definitely helped with our gut health. Dr. Chris describes it as more of a "stable stomach" and for me its been more fighting acid reflux and burning stomach. I have a history of ulcers and when I started to feel stomach burning coming back on, I stopped drinking it for a few days. But after a little bit of research I learned that it might actually be the best thing for it and when I started drinking it again, along with a few other smart eating decisions, the burning stopped. And has stayed away with starting my day with ACV.<br />
<br />
I'm not sure if anything can really curb sugar cravings completely, but we have both noticed a decrease, and honestly, any decrease I can get is a good thing! In terms of weight loss, there's nothing dramatic to report, but definitely a sense of overall feeling better. <br />
<br />
It's also worth noting that we've been doing pretty well at sticking to our eating and workout plans while doing this. Both of those, I'm sure have played a part in all of the benefits we've experienced, but also can't say that one or the other is <i>all</i> to thank. Just another reminder that one thing won't fix it all. I still think that there's something about starting each day doing something that's great for your health, that sets your frame of mind, and day, up for a healthy success.<br />

Typically I would want to just pick food up every other night or choose super simple unhealthy options. However this week we are sticking to a plan so we don't feel miserable before leaving on our trip.<br />

A lot going on this week so the meal plan is going to look a little short. We have a birthday party Sunday night. Yes, this means cake and I won't turn it down, when occasion arises I definitely do take advantage. One slice of cake won't kill me although it might put me in a sugar coma. With my parents coming in town Thursday night we will probably going out to dinner Thursday - Saturday. One smart suggestion I always have for dinner out is split a salad and an entree with somebody else then you get the lighter salad but the satisfaction of an entree as well.<br />

She told me there would be a scanner that could help tell you what oils your body was needing. I was skeptical, how could a scanner tell me anything that was going on in my body? But as skeptical as I was, I was also interested. The biggest challenge (and intimidation!) with essential oils for me has been figuring out where to start, exactly which oil I was needing and how to use it, etc. So I went. And I was convinced. It was quick and easy and the report I got back was dead on. We had just been traveling and I had returned home with chest congestion, sore muscles and all that fun stuff that comes along with it. My report told me I needed R.C., which was designed for respiratory care, Purification for getting the germs out, and a whole slew of oils used for muscle tension, relaxation and focus. It was pretty amazing and opened my eyes to how oils could help me feel better. This gave me a great place to start figuring out what my body was needing.</span></span></div>

Since it is such a nice day today it just feels right to light the grill and cook a weeks worth of chicken. We are going to grill two whole chickens and use it to make 3 dinners. We will have it tonight with mashed cauliflower and Brussel sprouts. Then use the left over chicken for a salad on Tuesday and chicken enchiladas on Wednesday. There are many varieties of oils talked about and sold today in the market. One of the most common oils sold is olive oil. Olive oil is a great oil but it is not always your best cooking solution. Other common oils I hear people talking about using are avocado oil, coconut oil, vegetable oil, sesame seed oil and canola oil. So the question of this blog is what are the better oils for cooking food on high to medium high heat?</div>

The first thing to know is every oil has a smoke point. An oils smoke point is the point at which the oil will start smoking on your stove top. Once oils reach this point the good nutrients begin to break down, a burnt flavor may be imparted on the food and a possible carcinogenic effect takes place in the oil. </div>

Some of my favorite oils for sautéing and searing foods on the stove top include avocado oil (smoke point of 520 degrees), coconut oil (smoke point of 350 degrees).</div>

Benefits of cooking with avocado oil: first off it obviously has a very high smoke point making it almost impossible to burn. Secondly it contains nutrients that are stable while cooking and help fight off inflammation. Avocado oil contains monounsaturated fatty acids which help lower <a href="http://broomfieldchirocare.com/" target="_blank">inflammatory messengers</a> in the body. Also, Avocado oil also contains high levels of oleic acid, carotenoids, lutein, vitamin E and phytosterols that combat<a href="http://broomfieldchirocare.com/" target="_blank"> inflammation</a>.</div>

Benefits of cooking with coconut oil: coconut oil contains saturated fats which are more stable under high heats. The fats found in the oil are medium chain fatty acids which are easier for your body to break down than long chain fatty acids found in other vegetable oils. These fats are easier used body to be broken down into energy and are also processed by the liver which means they are not readily stored in the body as fats. Also expeller pressed coconut oil is not processed using chemicals, it also does not have a heavy coconut taste unless you get extra virgin coconut oil which tastes more like coconut. </div>

I find myself wishing today that we celebrated the Academy Awards like the super bowl. An excuse to eat crappy foods and drink beer would be awesome right now, however we will stick to the plan stay healthy and fuel our bodies. This week I am experimenting with something I have never done, trying to make healthy gyro meat or something similar. It will be made of ground turkey and I am sure it will taste nothing like gyro meat shaved off the spit at a Greek restaurant but hopefully it will satisfy the craving just a little bit. I ran my first half marathon almost 2 years go. I’m not sure why I did it, other than a friend asked me if i wanted to. I said yes because I couldn’t think of a good enough reason to say no.</div>

Little did I know when i said yes to that adventure, I was saying yes to a full-on lifestyle change. I’ve always considered myself an active person. I love the outdoors, hiking, going for walks, etc. but life didn’t always make an active life easy. Crazy full-time jobs. An energy-sucking pregnancy. Ambitious house renovations. I can admit that sometimes, even with the best intensions, the couch was more appealing at the end of a long day.</div>

While life still doesn’t always make exercise a priority, I know its up to me to make sure it happens. Some of the reasons I workout are silly, some are more serious, but at the end of the day, I know there are a million good reasons I should be moving my body and I still can’t really think of a good enough reason to say no. This is why I workout:<br />

I have some pretty amazing friends who go on some pretty amazing adventures. I want to be able to go and i want to be able to keep up. I want to be able to climb that 14er with everyone or make it to the hut without holding the group back. I feel like the luckiest person in the world to have friends who push me to be the healthiest person i can and experience things others can only imagine. </div>

I run most of my races with two of my best friends from college. the last race we did was through a canyon in moab. what do most people do on girls weekends? spas? wine tasting? not us. we run 13.1 miles through the desert. staying in touch with your college friends years later is a gift, but having those friends to make you better, to laugh with when it hurts, is a blessing. I workout to be able to do the same thing for them.<br />

2. <b>I am a work in progress</b></div>
<div class="p1">
I used to be so mean to myself when it came to running. no time was good enough, every distance was too short. but then i realized something: there are enough people out there to be mean to you. It's up to you to be your own biggest cheerleader. If you celebrate every time you go for a run, no matter how far, or every time you make it to barre class, it’s WAY more enjoyable. I firmly believe in the idea that you are lapping everyone sitting on a couch somewhere, even if you just go around the block. Celebrate that! </div>

Working out is still hard. Runs are still absolutely exhausting. But if I look back to where I was two years ago when I said yes to that race, I have come so far. I am so much stronger. And I am, and always will be, a work in progress.</div>

<b>3. it's ok to be selfish</b></div>
<div class="p1">
Sometimes I feel selfish when it comes to making time to workout. I’ve always subscribed to the idea that saying yes to something means saying no to something else and I hate the feeling of putting my time ahead of anyone else’s. I’m extremely lucky to be married to someone who supports my work out time and he makes it possible. But If being selfish means making my health a priority, then I think more people should be selfish. </div>
<div class="p1">
One of the biggest lessons I learned having a child is that you have to take care of yourself to be able to take care of anyone else. It’s not a natural feeling, but if i want to keep up with Mason as he gets faster and faster and be able to hold him when he needs to snuggle, I have to work for that. If that means running and lifting weights to be there for my kiddo, i can’t think of a better reason. Also, every time he sees me lace up my running shoes he sees me choosing to be healthy. I can only hope he lives a healthy, active life, and I’m choosing to teach him by example. I always think of the phrase “little eyes are watching” and with this one, and I hope he is. </div>

I feel like the simple, “selfish”, act of choosing me, is me choosing everyone I care about.<br />

Mental health is something that a lot of people don’t feel comfortable talking about, yet most people have dealt with at some point or another. I’ve struggled with depression most of my life to varying degrees and now know that as much as working out is good for my body, it’s just as important to my mental health. Running is my time to clear my head, to get it all out and leave nothing behind. There’s something about the most exhausting part of your day being the most peaceful part. I get to know me again and I feel like clarity is restored. They say the person who starts the race is not the same person who finishes the race, and I find that true with every run, always for the better.<br />

If you’ve ever loved someone dealing with physical pain, who couldn’t run if their life depended on it, you know how hard it is to watch. God gave me a body that is able to push itself and do amazing things. I run because I can and I run for everyone who can’t. Health is a gift that i never want to take for granted. It’s a strange analogy, but I feel like every workout I do is an investment in my future. I want to always be active and enjoy life to the fullest and if that means saying yes to crazy races, then I will every time.<br />

This weeks meal plan doesn't start for us until Monday, we are headed out for a belated Valentines dinner on Sunday. As always we will tried to be sensible at dinner I had braised beef with vegetables and Kristen had an amazing sweet potato noodle lasagna. Shout out to <a href="http://west29th.com/" target="_blank">West 29th</a> in Wheat Ridge it was a nice dinner but not overly stuffy and fairly priced. Also big kudos for serving German beer in traditional ceramic steins. Later in the week we will be having two dishes with cauliflower rice. <br /><br />Huge thank you to one of my <a href="http://www.broomfieldchirocare.com/" target="_blank">patients</a> that told me about buying this pre riced at <a href="https://www.costco.com/" target="_blank">Costco</a>. Costco has 2 pound bags of organic cauliflower rice for $1.98 per pound which is cheaper than regular cauliflower per pound price at King Soopers. Nice!<b> </b><br />
